Why should I ask for the Gender?
We ask for surname and first name, so we can call them "Dear first name surname, ..."
The gender of a person isn't relevant for the service we offer.

I can't find any sense - except some statistics or maybe to get some found if the conference is diverse enough.

How do you address those without that category of names? Do you actually need more than Name [...]?

We sell goods in the name of our customers. Therefore, we ask for the valid name and address.
If you only have customers in Sweden then First and Surname might well work but validating names is a mine field. Having a single field for however someone constructs their name will still give a valid name for however the local conventions apply for addresses.

Then if it's only Germany the same applies.
